During the winter, I often have oatmeal for breakfast. I use quick oats, and add a little bit of brown sugar and coconut oil. But when summer comes, a hot breakfast is no longer appealing to me. But oatmeal is tasty and inexpensive and it fills me up. What’s a girl to do? Well, last week, I discovered (via Pinterest) COLD oatmeal. What the what?! Rolled oats, yogurt, fruit, and milk all mixed together and tucked into a jam jar, for a tasty, quick, filling breakfast. Breakfast solved.
Here’s what I used:
1/3 c. Rolled oats (not quick oats, just the regular kind)
1/3 c. Greek yogurt
1/3 c. Rice milk
1/2 Banana, sliced
1/2 c. Blueberries
1 tbsp. Agave nectar
Dash of cinnamon
Lots of recipes call for chia seeds, which I’d love to add (they’re a superfood), but I didn’t have any on hand. I added some hemp seeds to my second batch. We’ll see how that turns out.
I used rice milk because it was what I had in the fridge. I think any type of milk would work just fine.
Yummy summer breakfast on the go! There are LOTS of different recipes for all sorts of flavours. Just do a quick Google search on cold oatmeal, and pick your faves.
